How to Make Takoyaki

Takoyaki is a traditional snack found in the streets of Japan. This delicious dish is made out of batter with pieces of diced octopus in it. This snack is made in a specialized pan, which creates ball shaped dough when used. These “octopus balls” are most famously found in the Kansai region of japan, most notably, Osaka. These savory little creations are famous for its creamy, but flavorful interior, along with the sweet mayo and okonomiyaki sauce combination layered on top. Ingredients: IMPORTANT: YOU NEED THE SPECIAL PAN TO MAKE THIS SNACK (and have thin skewers) (For around 32 balls)
  • Batter
    • Dry Ingredients
      • 1 cup all purpose flour
      • 2 tsp. baking powder
      • ½ tsp kosher salt
    • Wet Ingredients
      • 2 eggs
      • 1 tsp soy sauce
      • 1½ cup dashi stock
  • Toppings
    • 1 octopus tentacle (or any part of the octopus, but preferably tentacle)
    • 2 green onions
    • ⅓ cup tempura scraps (tenkasu)
    • ¼ cup bonito flakes
  Note: All of these ingredients can be found in your local Japanese grocery store
  1. Prepare your ingredients!
    1. Make sure to dice your octopus into small pieces 
    2. Do the same with your green onions
    3. Grind your bonito flakes into a powder. This can be achieved through rubbing the flakes against a sifter with a spoon. Make sure to have a bowl underneath!
    4. Put all of your ingredients into separate bowls
  2. Mix your dry ingredients!
    1. Quite self explanatory. Mix all of the ingredients under the “dry ingredients” category evenly
  3. Put in your wet ingredients!
    1. Crack the eggs into your dry mixture
    2. Add in the soy sauce
    3. Add in the stock
    4. Mix! It will take a bit, but make sure to mix out all the chunks of flour to create a smooth, batter-like consistency.
  4. Cooking!
    1. Make sure to have skewers to help turn the batter. 
    2. Prep your pan by heating it to 400℉ 
    3. Make sure to add a good amount of oil to each pocket, this is so the outside can crisp faster, while maintaining a creamy interior
    4. Pour your batter in! You should add a little extra to fill the pockets and create spheres.
    5. Now here is the hard part: wait for the batter to cook, and make sure it is firm before starting to tuck and turn. This requires a lot of patience, because if the batter is not cooked on the outside, the ball will fall apart. 
    6. While you wait for the batter to harden, add in the toppings, make sure to add a piece of octopus within each pocket. (Make sure to remember where the pockets are)
    7. As soon as the batter cooks in each pocket, break the connection between each pocket and starts tucking and turning each pocket, There should be no friction between the batter and the pan due to the oil.
    8. Repeat the process until you have individual balls!
 
  1. Eat!
    1. Plate the balls onto a dish and add the sauce and mayo
    2. Enjoy!
