Breakfast is the first meal of the day, and the most important one. After all, you need to get all the nutrients you can to power through grueling online school assignments and uncomfortable virtual conference calls. Thus, we have put together a series featuring easy-to-make, fun, and fast breakfasts so you can start your morning doing something you really enjoy. These recipes are not only fun, they’re healthy too! I know that I can’t stop snacking during quarantine, but with the help of these healthy meals, I don’t have to worry about gaining 50 pounds and looking like Marvel’s Fat Thor by the time I return to school (phew!)
Fruit Parfait
Ingredients:
- Yogurt (preferably unsweetened to prevent too much sugar intake)
- Fresh Fruit
- Granola or oats
- LACTAID (if you have lactose intolerance, like me)

Yogurt by itself is delicious (especially Go-Gurts), but when you pair it with crunchy granola and fresh fruit, the result is absolutely stunning. The cool mix of flavors and textures will be sure to keep you wanting more. It’s also made of simple, fresh ingredients most people already have in their homes: even better!

For the yogurt, pick your favorite brand and flavor. What’s the point of making food if you don’t like it? We recommend unsweetened Greek yogurt, and before you riot hear us out. Sweet, flavored yogurts are stuffed to the brim with sugars, and can make a parfait the opposite of a healthy breakfast. As a reference, McDonald’s parfaits have 23g of sugar, which is more than some ice creams! Greek yogurts also contain lots of protein and probiotics, which are helpful bacteria that are good for your digestive system and prevent you from getting more harmful diseases. If it’s a little too plain for you, just add some honey or syrup!
It doesn’t really matter what fruit you use, but we suggest trying kiwis and oranges. They’re high in vitamin C, and full of antioxidants that can help boost your immune system. The same can be said for raspberries, blueberries, and blackberries, which you can frequently buy pre-washed and frozen at local grocery stores. I’ll link the kind I use here. They’re from Costco, and you can deliver them to stay safe during the quarantine. Any types of fruits are going to be good for you, and this parfait is a great way of getting one of your two servings in each day!
If you don’t have granola or oats, don’t fret! Chopped up nuts work just as well. I like to lightly blend unsalted, mixed nuts and add them to all my breakfast foods, including parfait, oatmeal, and pancakes! It’s a great way to add healthy fats and extra flavor.
