Easy Blueberry Cobbler Recipe

Summer is here and that can only mean one thing: it’s blueberry season! Why not take advantage of the fresh blueberries lining the shelves of your local grocery store and make some delicious cobbler! This recipe is insanely simple and insanely good at the same time (when I make this at least half of it’s gone within half an hour).

Ingredients

Filling:

  • 1 pint blueberries
  • Zest of half a lemon
  • 2 tsp sugar
  • 3 tsp flour

Topping:

  • 3/8 cup rolled oats
  • 3/8 cup sugar
  • 1/2 stick of butter / oil of your choice
  • 1/4 cup sugarMicrowave butter at 30 sec increments until melted

Add all ingredients, stir until combined

Step-by-Step

  1. Mix filling until evenly distributed, place in a pie tin and set aside
  2. Microwave butter at 30 sec increments until melted
  3. Stir in remaining ingredients for the topping
  4. Place topping over filling, distribute until a satisfactory level of thickness is reached
  5. Bake 20-30 min until blueberries burst and topping is slightly golden
  6. Let cool 10 min, then serve and enjoy!
