Given the quarantine, I’m sure many of us are missing our favorite restaurants and their respective desserts. Crème brûlée is something that sounds really fancy and intimidating, but this kind-of-a-shortcut recipe should be really easy to follow and impress your family with.
Crème brûlée is a dessert made of custard and caramelized sugar on the top layer. It’s eaten slightly chilled, with the caramelized sugar on top still warm. It’s ingredients can be broken down into cream, sugar, egg, and vanilla, which means we can simplify the process simply by using ice cream and eggs.
In case you don’t have ice cream and can’t run to the grocery store, we also have an easy, fun, hand-made ice cream recipe.
Crème Brûlée
Ingredients:
- 1 cup of vanilla or flavored ice cream
- 2 tbsp of sugar
- 2 egg yolks (if you’re using flavored ice cream, use the egg whites too)
Estimated time – 4 hours (a lot of it is just waiting for the crème brûlée to cool down and chill in the refrigerator. The actual process of making it takes 5-10 minutes.)
Serves two people.
Step-by-Step:
- Gather all your ingredients and preheat the oven to 325F.
- Melt the ice cream in the microwave and wait for it to cool to room temperature.
- Separate the egg yolks from the egg whites using this trick (0:22). If you’re using ice cream flavored with something different from vanilla, use the entire egg.
- Pour the mixture into a ramekin. A ramekin is a small glazed container made for baking that can withstand high temperatures inside an oven. I don’t have a ramekin, so I used a small, Pyrex container. If you don’t have a ramekin either, make sure you check if the container is oven-safe, and follow these precautions.
- Put hot water into a baking pan to about half the height of the ramekin. Place the containers in the pan and put everything inside the preheated oven for 40-50 minutes.
- Take out the crème brûlée when the edges are set and the middle is still slightly jiggly. Take the ramekins out of the pan and let them cool to room temperature. This is important for making sure the dessert has a silky, not grainy, texture.
- Cover the ramekins with saran wrap and chill them for at least 2 hours.
- After they are chilled, add a tablespoon onto the surface of each one and caramelize it with a blowtorch, or by putting the ramekins inside the broiler on high for several minutes.
- Enjoy!
