Paella (pai·ei·uh) is a classic Spanish rice dish made with rice, saffron, vegetables, chicken, and seafood cooked and served in one pan.
Ingredients:
- Half a package of Trader Joe’s Seafood Mix (defrosted)
- 1 cup of chicken stock
- 1 can of diced tomatoes
- 2 cups of Spanish short-grain rice (soaked for approximately 4-5 hours beforehand and drained)
- 4-5 cloves of garlic
- ½ teaspoon of saffron
- 1 small onion
Step 1:
Saute the garlic and onions with 3 tbsp olive oil until it soft & fragrant
Step 2:
Add a small amount of water (so that the Saffron is covered) and let sit while the garlic and onions cook
Step 3:
Add the seafood to the garlic and onions, continue letting it cook.
Step 4:
Pour can of diced tomatoes into the pan, let simmer.
Step 5:
Add the soaked & drained rice into the pan.
Step 6:
Pour the saffron mixture that we let sit onto the rice, this will give your rice that signature golden color.
Step 7:
Mix so that the rice and saffron are evenly incorporated and pour in chicken stock.
Step 8:
Allow the contents of the pan to cook on medium heat for approximately 5 minutes, then turn off the heat and allow it to sit for an additional 5 minutes. Once done, top it off with freshly ground black pepper.
Step 9:
Pair with your choice of vegetables, plate, and enjoy!
