Pineapple Fried Rice

The debate of whether pineapple should be put on pizza is, quite frankly, getting old. However, I now present to you: Pineapple in fried rice. Yes, this is real, and yes, it is absolutely delicious. While the origin of this dish is not confirmed, many believe that it was originally from Thailand. The sweet flavor of the pineapple is a nice touch to the usually salty fried rice, giving the dish some nice contrast and depth of flavor. 

 

To begin, you will need to fry some rice. If you already know how to make fried rice, then this recipe will be a breeze, but if not, that’s fine too because you will now learn an easy fried rice recipe. The ingredients are as follows:

  • As much pre-cooked rice as you want (I prefer leftover rice because it’s a little bit tougher)

  • 1-2 eggs

  • Vegetables such as corn or peas, again, as much as you want.

  • Soy sauce

  • Salt to taste

  • Chili powder to taste

  • Enough oil to cook everything

You may also add some protein if you want:

  • Ground beef

  • Ground pork

  • Shrimp

  • Cubed salmon

 

Now, the last piece of the puzzle: pineapple. Just cut the pineapple in half lengthwise so that it looks like a boat. Then, carefully remove the edible part without damaging the hard skin of the fruit as shown below. Cube your pineapple fruit.

 

After all the ingredients are prepared, you are ready to fry the rice. 

  • First, scramble the eggs with some oil until they are almost completely cooked. Then, remove them from the heat. 

  • After that, use more oil and cook the vegetables. Remove them as well. 

  • If you are including meat then now is the time to cook it. Make sure it cooks all the way through. 

  • Now add everything back to the pan, turn the heat down, and add your rice, soy sauce, chili powder, and salt.

  • Add pineapple cubes when everything is almost done. The pineapple should be slightly warm when the rice is served. 

  • Stir everything together and voila! Your pineapple fried rice is done.
